I've been eating at the Hare & Tortoise in Putney for nearly a decade, and I have to say I've never had to send anything back, the raw fish is outstanding in quality, freshness and value, overall the service is very good and as a place to eat, I've introduced many of my friends to it - and many travel quite a distance to get to this place.
I hear Cho San next door is better, and maybe so. But for value and quality, you cannot beat Hare & Tortoise. I've looked at Cho San's menu from the window, since they are right next to Hare & Tortoise, and Cho San is definitely the more expensive choice.
If you want a real experience with several appetizers, alcoholic beverages, raw fish Sushi such as a Sashimi platter, and main dish - for two people, you will pay around 50 pounds.
Hare & Tortoise is the place I go to eat; however, the best time to visit is between 2 - 6pm. After that, it tends to get quite busy, with a wait time for a table on busy nights.
